Zucchini Bread

by Shannon Cyr December 22nd, 2011 | Recipe
Growing up, one of the few ways that my mom could guarantee that I was eating enough vegetables was to hide them in my food. This gave meatloaf surprise a whole new meaning. Seriously, I don’t think I’ll ever recover from finding pieces of Brussels Sprouts in the center of my meatloaf.

Fortunately, my mom was aware of my sweet tooth and started making carrot bread and zucchini bread as a snack. The great thing about zucchini bread is it tastes nothing like zucchini – it’s sweet, moist, and utterly delicious.

  • Check your mail order deliveries as soon as they get there. It's hard not to panic if you wait till after dark on Christmas Eve to open that package that got in a few days ago -- then find it doesn't have everything you expected. (Whether it's your fault for thinking you had ordered something you didn't, or their fault for not sending it, your main reaction is still panic.) However . . .

  • If you do need a last-minute present, think
