Nothing Charms Like Chocolate!

They say the way to a man’s heart is through his stomach. Perhaps the same can be said for us ladies. What’s the best way to round out a romantic candlelight Valentine’s Day dinner for two? Or maybe it is a romantic Christmas Eve dinner after the kids are tucked away in their beds dreaming of Santa Claus. I’m talking about chocolate. The sheer decadence of chocolate tantalizes the taste buds and satisfies the sweet tooth. Go on- indulge!

This recipe, which has been in my family for years, doesn’t require too many ingredients and is easy to make whether you are a beginner at baking or a seasoned pro. If you want to get creative, decorate the top with colorful sprinkles, red candy hearts or write her name in the icing with food coloring. Whatever you do, have fun with it!

Chocolate Cake

Ingredients:

1 cup boiling water

3 oz. unsweetened chocolate

½ cup butter

1 tsp. vanilla

2 cups sugar

1 tsp. baking soda

½ cup sour cream

2 cups all purpose flour

1 tsp. baking powder

2 eggs, separated

Combine chocolate and butter in a large mixing bowl and pour boiling water over them. Let stand until melted. Stir in vanilla and sugar. Then whisk in egg yolks, blending well. Mix soda and sour cream and whisk into chocolate mixture. Sift flour and baking powder. Add to batter. Mix well. Beat egg whites until stiff but not dry. Stir ¼ of egg whites into mixture. Fold remaining ¾ gently into batter. Pour into pan and cook on middle rack in oven at 350 degrees for 45-55 minutes. Cool in pan for 10 minutes before unfolding. Ice with chocolate icing.

Not sure what to drink with your chocolate? Break out the wine glasses and toast to the holiday with Zinfandel, Cabernet Savignon or Syrah. A sweet dessert such as yummy chocolate also goes well with a sweet or semi-sweet white wine.
