It’s never too early to start planning!
If you’re looking for a hearty pasta meal for Father’s Day that isn’t too calorie rich, this recipe for Pasta Bolognese will fit the bill. This healthy dish is as rich and flavorful as the original that Dad loves, but at a fraction of the fat and calories. It’s easy to make, produces enough for a family of 8, freezes beautifully, and tastes like you’ve been slaving over a hot stove all day.
I’ve tested the recipe a few times and have made a couple of slight modifications to the original to help improve the dish’s texture and flavor. Enjoy!
What You’ll Need:
* 1 (13.25-ounce) package whole-grain linguine or fettuccini
* 4 (4 oz) chicken sausage links, spicy Italian flavor
* 1 pound 95% lean ground beef
* 1 medium onion, chopped
* 1 (8 oz) package fresh mushrooms, sliced
* 1 ½ tablespoons fresh rosemary, finely chopped
* 1 tablespoon fresh basil, finely chopped
* 1 (28 oz) can diced tomatoes, undrained
* ½ cup fat-free evaporated milk
* ½ teaspoon freshly ground pepper
* ¼ teaspoon salt
* Grated parmesan cheese (optional)
How to Make It:
The Pasta:
1. Cook pasta according to package directions, omitting oil and salt, in large pot
2. When pasta is done cooking, drain and return to pan, keeping it warm
The Sauce:
1. While the pasta is cooking, remove the sausage from its casing
2. Coat skillet with non-stick cooking spray and heat over medium-high heat
3. Add sausage, beef, and onion
4. Cook mixture, stirring to crumble, until browned
5. Drain and return to pan
6. Add mushrooms, rosemary, and basil
7. Stir in tomatoes. Reduce heat and simmer uncovered for 3 minutes
8. Stir in milk, pepper, and salt. Cook 2 minutes
9. Add sauce to pasta, tossing to coat
10. Sprinkle with cheese and serve immediately
Yield: 8 (1 ½ cup) servings
