"Buñuelo" is a word with more meanings than there are Spanish-speaking countries, but it always stands for some kind of sweet, fried dough. Even fried tortilla wedges with cinnamon sugar can count as buñuelos when you're pressed for time.
Looking for possible desserts for Cinco de Mayo, I read that Mexican buñuelos were made of yeast dough flavored with anise, but I couldn't find any recipes for this. Easter bread is a holiday tradition in the Slavic countries – one I’ve tried to adopt over the years since my marriage. I say “tried” because the recipes, no matter how dumbed down for modern bakers, were usually too much for me. Finally, I came up with my own version. If you’re not too conscientious, you can call it “kulich” or “babka”, but it’s based on The Joy of Cooking’s Brioche Loaf Cockaigne. Please don’t tell anyone.
