A Sweet Treat to Eat

On Friday, March 2nd, Dr. Seuss’s birthday is celebrated.  Also known as Read Across America Day, it is a terrific day to celebrate the man who has introduced generations of children to reading, rhyming, colors, counting, and numerous other educational items.

In addition to reading your favorite Dr. Seuss books, baking some cookies could be a great way to have fun.  Using the sugar cookie recipe below, let creativity be your guide.  Use cookie cutters or a butter knife to cut free form, and you soon will have a trayful of cookies to decorate.

Whether you choose to make egg-shaped cookies that are frosted green or cut out original shapes that are one-of-a-kind (in honor of Dr. Seuss’s creativity), they are certain to be tasty.

Sugar Cookies (recipe courtesy of Think Tasty)

1 cup unsalted butter, softened
1-1/2 cups sugar
2 eggs
1 tsp. vanilla
3-1/2 cups flour
1/2 tsp. salt
1/2 tsp. baking powder

Combine butter and sugar in a large mixing bowl or stand mixer, and beat until creamy. Add eggs, one at a time, and beat well. Add vanilla, flour, salt, and baking powder, and mix well. Divide dough into two pieces, wrap each in plastic wrap, and refrigerate for at least 2 hours.

Preheat oven to 350. Roll dough on a floured surface, and cut into shapes. Place shapes on cookie sheet, and bake for 8 to 10 minutes.

Cool on a baking rack, and frost as desired.
